Tapioca starch It is starch extracted from cassaca. It has a strong binding power and from plasticity to doughs. It is a good source of complex carbohydrates for the body. This starch is used to thicken soups, sauces, creams, puddings or ice creams, and to make leavened sweets more crumbly. Mixed with flours from a particular lightness and softness to sweets, it can also be used alone but, better, mixed with flours and prepared (dose it to taste but a maximum dosage of 30% is more than enough) to increase the lightness of the products obtained.
