Inulin Obtained from chicory roots is an ingredient with numerous specific properties. At high concentrations it has gelling properties and, mixed with water, forms a creamy structure easily incorporated into food. Thanks to its versatility it can be used to increase fiber content, reduce sweet taste (it has a sweetener power of about 1/10 compared to sucrose), to produce foods with low glycemic index, as a stabilizer of natural ingredients. Establishing a correct quantity to use is not easy and depends on the uses you want to make of it; more generally it is not recommended to use it more than 5-6 %, also because, being metabolized as fiber, it could have a laxative effect.
